Does anyone know the ratings of the spindle output on the xcarve? Can it handle 12V and 2A? Or is it just used as an on/off signal?

Depends on the signal you are referring to.
Things that would be helpful to know:
Are you using the Arduino/gShield with the Inventables power supply circuit board or are you using the X-controller, maybe something you put together yourself?
A picture of the output you are asking about would help.
