You can never have to many clamps…I’d do it all at once.

In that case, move fast or break it into sections to glue. I prefer tightbond for wood, I can pace myself 
That’s very cool. The best part about all of this is the repeatability factor. Once you nail the design, you can cut out dozens of these things instead of having to manually scroll saw and sand.
One thing, did the tail-heart get damaged irrevocably? I’ve busted pieces of oak off and was able to glue it back on with an invisible seam. Regardless, nice save.
